L\u2019aspect traditionnel de la cuisine lyonnaise n\u2019a pas disparu avec le temps. Cette gastronomie tend tout de m\u00eame a conserver et \u00e0 mettre leurs traditions. Et, ce tout en s\u2019ouvrant aux nouvelles tendances culinaires.<br \/>\n<\/span><\/p>\n<p class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">Dans la ville, les \u00ab\u00a0bouchons\u00a0\u00bb sont des restaurants traditionnels qui sont tr\u00e8s r\u00e9put\u00e9s \u00e0 Lyon. Ils sont reconnus pour leur int\u00e9rieur en bois et leurs fameuses nappes \u00e0 petits carreaux rouge et blanc. Ils servent des plats tr\u00e8s copieux et traditionnels. <\/span><\/p>\n<h3 class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">Les plats c\u00e9l\u00e8bres <\/span><\/h3>\n<h4 class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\"># 1 &#8211; Les quenelles <\/span><\/h4>\n<p class=\"p1\"><span class=\"s1\">C\u2019est un plat typiquement lyonnais. C\u2019est une recette de cuisine faite \u00e0 base de p\u00e2te, p\u00e2te de choux de farine ou de semoule en forme g\u00e9n\u00e9ralement allong\u00e9e. Les quenelles sont cuites \u00e0 l\u2019eau. Une brioche moelleuse et un saucisson de porc bien cuit\u2026 Le saucisson brioch\u00e9 est tr\u00e8s simple \u00e0 r\u00e9aliser et ne demande pas beaucoup de temps.\u00a0<\/span><\/p>\n<h4 class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">3 # Le poulet C\u00e9lestine <\/span><\/h4>\n<p class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">Le poulet C\u00e9lestine est un poulet saut\u00e9 avec des tomates et des champignons, assaisonn\u00e9 avec du cognac, du vin blanc, de l\u2019ail et du persil. Il a \u00e9t\u00e9 imagin\u00e9 en 1860, par Rousselot, chef saucier du Restaurant du Cercle, \u00e0 Lyon. Le but de ce plat \u00e9tait de s\u00e9duire une M\u00e8re lyonnaise, C\u00e9lestine Blanchard. Le plat porte son nom en son honneur. <\/span><\/p>\n<h4 class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">4 # Le tablier du sapeur <\/span><\/h4>\n<p class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">Ce repas est \u00e0 base de gras-double<span class=\"Apple-converted-space\">\u00a0<\/span>d\u00e9coup\u00e9 en triangle, cuit au bouillon et marin\u00e9 au vin blanc. Ce plat se retrouve dans les cartes de tous les bouchons lyonnais. Il est consid\u00e9r\u00e9 comme une entr\u00e9e. G\u00e9n\u00e9ralement, il est accompagn\u00e9 de pommes de terre et de mayonnaise. <\/span><\/p>\n<h4 class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">5 # La tarte aux pralines <\/span><\/h4>\n<p class=\"p1\" style=\"text-align: justify;\"><span class=\"s1\">Une tarte \u00e0 la couleur rouge, une texture croustillante, une p\u00e2te sucr\u00e9e, des pralines bien cuites et des amandes : la tarte aux pralines est un dessert lyonnais populaire dans toute la France.
