Durant ce premier bain, la pomme de terre crue va cuire, mais ne va pas dorer&nbsp;: c\u2019est la<span style=\"text-decoration: underline;\"> pr\u00e9-cuisson.<\/span> Cette \u00e9tape va faire perdre \u00e0 la pomme de terre son jus, il est donc important de ne pas la cuire \u00e0&nbsp; une temp\u00e9rature trop \u00e9lev\u00e9e, car cela emp\u00eacherait l\u2019\u00e9vacuation du jus. Astuce&nbsp;: Votre pr\u00e9-cuisson est finie lorsque les frites bouillonnent \u00e0 la surface.<\/li>\n<li>Laissez les frites <strong>reposer<\/strong>, au moins 10 minutes pour leur permettre de diminuer leur temp\u00e9rature.<\/li>\n<li>Replongez vos frites dans un nouveau bain de cuisson \u00e0 <strong>175\u00b0C durant 2 \u00e0 3 minutes<\/strong>. C\u2019est ce bain qui va rendre vos frites <span style=\"text-decoration: underline;\">dor\u00e9s et croustillantes<\/span> \u00e0 souhait.<\/li>\n<li>Enfin, <strong>secouez<\/strong> les frites dans la passoire afin d\u2019\u00e9vacuer la vapeur et d\u2019\u00e9goutter l\u2019exc\u00e9dent de graisse. <strong>Salez<\/strong> et <strong>servez<\/strong> sans attendre.<\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\">Quelle graisse utiliser&nbsp;?<\/span><\/p>\n<p><span style=\"font-size: 14px;\">Le blanc de b\u0153uf est particuli\u00e8rement appr\u00e9ci\u00e9 des restaurateurs, notamment pour le go\u00fbt que cette graisse de b\u0153uf procure aux frites.
